Can you be creative with your meal cooking? Yes, you can!



With trial and error, I became creative with my meals. After a long road of tending my children and education (I attended college with kids!), I successfully cooked healthy meals with least family’s criticism. I also did not have to use too much of cookbook, which I have tried in the past. I also learned that you do not have to follow the cookbook in specific ways. I am talking about meals. I do not make cookies, cake, or any kind of desserts so I do not know about that area. I realize that the cookbook can be your guide to some meal ideas. 

For example, there was a recipe called Vegetable-Hummus Wrap. It asked for Portobello mushrooms, zucchini, sweet onion or red onion, red sweet pepper, hummus, tortilla, and parmesan cheese. I did not have everything of what this recipe calls. I decided to use what I had in hand at the time: shallots, Bok Choy, red bell pepper, zucchini, green onion, garlic, and cilantro. As I cook these ingredients, I added a dash of ginger and cumin. I also had tortilla and hummus. I spread hummus on tortilla then put into some veggie mix (cooked to tender). Wrap them up and serve. Unbelievably, my kids emptied their plates. It had become our favorite family meal. I called it veggie wrap.
I shared my veggie wrap on my personal Facebook page. A person mentioned that she is not a vegetarian. I clarified her that I am not either and it is good idea to eat variety of meals. I do eat meat! 

You can create your own meals with your favorite ingredients. Another example I would like to share is the chicken kabobs that had green bell peppers, red onions, and zucchini. I had some of chicken kabobs leftovers. I had the leftovers to my favorite spaghetti sauce for a spaghetti dinner. It was tasty and what’s more, the sauce had an extra boost of vegetables! Another benefit is a money saver.

Veggie Wrap
Bok Choy
One red bell pepper
One Shallot
One clove of garlic
About ½ to 1 cup of cilantro
One green onion
One zucchini
Dash of ground cumin and ground ginger (or fresh chopped ginger – however you prefer)
Tortilla
Hummus of your preference

Cook all ingredients in large pan to tender at medium heat. Spread hummus on warmed tortilla. Place vegetable mixture on tortilla and wrap. Serves 5.
